Midweek Leftovers - King Salmon and Veggies

This one is pretty simple:

Sweet potato
Brussel Sprouts
Cauliflower
Coconut oil (5 tbsp)
Leftover baked King Salmon

I heated up the veggies, and then added the salmon at the end to warm it up.





As a bonus for Rufus, with his modified Evo or Evolutionary diet, he had:

Evo dry
Evo canned
1 egg yolk
1 probiotic pill (white - hidden in the wet food)

When are you handing me my bowl? Says Rufus!

This Week's Gruel - More Beef and Liver - with Dog Treats

This week's gruel is pretty much like last week's:

48 oz tomato sauce
1 shallot
10 baby carrots
6 large brussel sprouts
broccoli
kale
1.3 lb grass fed beef roast
1/4 lb grass fed beef liver

However, the twist was baking some liver treats for Rufus.  I cut 1/4 lb of liver into strips and baked in an oiled pizza pan at 300 for about 15 minutes.  Yum! says Rufus.

Almost forgot the Kale!

This was 1/2 lb and I don't "love" liver yet, so I split it with Rufus

1/4" thick strips - baked at 300 for about 15 minutes.

Finished product - keep in the fridge for a week's worth of treats.

Be careful when feeding - I almost lost a finger.

Hiking and Grilled Buffalo

Yesterday was the first hike without Lucy.  It went well.  Three Forks is a great set of waterfalls, although it is about 100 miles from Atlanta.





Rufus found a friend named Max.  They were almost identical, but Max has a white-tipped tail.

After the hike, we stopped and picked up some fresh ground buffalo.  Yum!

Lunch and Dinner - Beef, Liver, Salmon, and Bacon

I missed a few days, so here is some catching up with some finished products.

1.  Slow cooker stew with

Grass fed ground beef - 1 lb
Grass fed beef liver - 1/4lb
tomato sauce
red onion
veggies...  can't quite remember all that went in there.

Made 4 bowls, so that's 1 oz of liver a day.  Healthy stuff.



2.  Baked King Salmon and veggies slow simmered in ghee.  More carb friendly on this one with the sweet potatoes.


3.  Bacon! and veggies - Golden beet, cauliflower, and asparagus.  Ran out of food, so I had to improvise.  Big stocking trip to get some more meat from Riverview Farms tomorrow at the Flat Shoals stop.

Sweet Potato, Veggies, and Fried Eggs & Bacon!

Here's a quick one...  My friend sent me a text saying "I miss carbs".  She's on Day 2 of the Paleo diet.  I told her to eat a sweet potato.

So, here's a Paleo friendly dinner.

Ingredients:

Japanese Sweet Potato
Shallot
Kale
Asparagus
Chopped Bacon

Low heat stir fry in Macadamia Nut Oil


Fry 3 eggs in your small Lodge cast iron pan



While you're waiting, take a few bites of your Fermented Veggies


Put it on a plate... and chow down

A Couple Salmon Themed Dinners

These are pretty simple.  Anyone who says "I don't have time to cook" isn't really trying.  Total effort in making both of these was under 10 minutes, or up to 25 counting time for the oven to warm up and cook the salmon.

Pretty basic - baked Sockeye with veggies sauteed in coconut oil

Next up, we have a salad.  I cooked an extra salmon filet, with the one above.  So, time for a dinner salad.

Cooked some Asparagus in ghee and bacon fat


I also had some leftover smoked salmon from Whole Foods

Warmed it up in ghee and bacon fat

Guacamole - The Secret Ingredient Revealed

People often compliment my guacamole.  I think that happens to anyone who actually makes it from fresh avocados instead of squeezing it out of those nasty plastic tubes.  In any case, here's the recipe.



Avocados (a critical, but not so secret ingredient)
Shallot
Garlic (crushed)
Chopped baked bacon
Heirloom tomato
Chipotle pepper
Cayenne pepper
Black pepper
and one more thing

Basic ingredients

Baked Bacon - chopped

Crush the garlic, add the spices, and stir

And that's it...  just post a picture of fresh guac to your Facebook page and then wait for your phone to ring.

Secret revealed - 2 tbsp of the Jalapeno pickle juice - juice only, no peppers



This Week's Gruel - Beef Stew w/ Coconut Milk

Nothing really special about this week's gruel, just another week of eating Paleo lunches rather than fast food or whatever the cafeteria serves up.

  • Beef Top Round 
  • Shallot
  • Carrots (A few extra because my little buddy Lucy won't be eating her share anymore)
  • Golden Beet
  • Brussel sprouts
  • Chopped tomato
  • Broccoli Rabe
  • Fire roasted diced tomato
  • Coconut milk
  • Spices:  Turmeric, Cayenne, Black Pepper

Turmeric (curcumin) is some really good stuff... It may fight infections and cancer and Alzheimer's and other inflammatory diseases.

The base layer...

More good veggies

Coconut milk - it's good for you!

Add the tomato sauce and coconut milk

Add the meat and spices - I was using up a bottle of Turmeric...

Add the 1/2 of frozen Broccoli Rabe... turn on the crock pot and wait 6 - 8 hours
