Ghostly lamb stew

here's a pretty standard lamb stew, but this time with Ghost Pepper.  It also goes by the name Naga Bhut Jolokia.  Apparently, it was once thought to be the hottest pepper on earth.  Read more here.

All I can say is "be careful".  A small amount goes a long way with this stuff.  This is about 1/2 tsp for a whole pot.  Not sure how it's going to turn out, but better safe than sorry.


Standard stuff.. Lamb, bacon, onion, black pepper & cayenne


Veggie layer:  japanese sweet potato, yellow squash, asparagus

Oh, and brussel sprouts and tomato sauce

and 2 cups of coconut milk

And some aquatic grass... aka   wild rice

Massive Pot Roast

Here we go.  This is another in the pot roast series.  While the slow cooker is very handy, pot roast takes half the time and is just as tasty.

This week started with 2 strips of bacon and 1/2 of a red onion in the bottom of the pot.  Additional ingredients:

Golden Beet
Japanese Sweet potato
Cauliflower
Broccoli
Kale
Coconut milk
Tomato sauce
1 3/4 lb grass feed beef shoulder roast
black pepper
turmeric (do you say tuR mer ic   or Tu mer ic ???  I prefer the former, but maybe I'm wrong)
cayenne

The rest:

Veggie Layer
Add 1 cup coconut milk and a nice chunk of grass fed beef
Coated with Turmeric and Cayenne
Ready for the oven - 325 for about 3 hours

Grilled Pork Chop

This was a very very tasty pork chop from Frolona Farms.  They were out of grass fed beef the last time I stopped by the farmer's market in East Atlanta Village.  So,... this turned out to be a great alternative.

Buffalo Meatballs

My name is Riley and I have boundless energy!!!

Well, there was a little hiatus from posting as I adjusted to having a new kitchen helper, Riley.  She's about 10 months old now and quite full of energy.  I've been hiking so much that I've lost about 3 lbs.

I also needed to come up with something a little different in terms of a recipe.  So, here are some grilled buffalo meatballs with a veggie mix of Japanese sweet potato, yellow squash, spinach, and shallot cooked in ghee.  I'm upping the carbs in my diet after getting a question answered on an episode of Robb Wolf's Paleo Solution podcast.  Essentially, I was in sort of a limbo land between a ketogenic diet and one with not quite enough carbs.  Listen to the podcast for more details.

Here's the photo sequence.

Garlic and olives

1 lb of ground buffalo from Costco

Mix it together

Add some black pepper and cayenne

Form into meatballs

These are very low fat, so I coated them in Avocado Oil to prevent sticking on the grill


Onto the gas grill with Man Grates

Here's a sweet potato that I pre-baked.  This makes it quicker to cook since you just need to heat it up.

A few quick Paleo dinners

here they are... recent dinners.

This one is Pork Tenderloin.   And yes, I have read Paul Jaminet's series on pork, but still eat it.  Yum!

I'm going with correlation is not causation and other critiques of this that talk about the quality of the source of the pork.  Also, much of what I eat is organic from local farms.

Midweek Leftovers - King Salmon and Veggies

This one is pretty simple:

Sweet potato
Brussel Sprouts
Cauliflower
Coconut oil (5 tbsp)
Leftover baked King Salmon

I heated up the veggies, and then added the salmon at the end to warm it up.





As a bonus for Rufus, with his modified Evo or Evolutionary diet, he had:

Evo dry
Evo canned
1 egg yolk
1 probiotic pill (white - hidden in the wet food)

When are you handing me my bowl? Says Rufus!

Hiking and Grilled Buffalo

Yesterday was the first hike without Lucy.  It went well.  Three Forks is a great set of waterfalls, although it is about 100 miles from Atlanta.





Rufus found a friend named Max.  They were almost identical, but Max has a white-tipped tail.

After the hike, we stopped and picked up some fresh ground buffalo.  Yum!

Lunch and Dinner - Beef, Liver, Salmon, and Bacon

I missed a few days, so here is some catching up with some finished products.

1.  Slow cooker stew with

Grass fed ground beef - 1 lb
Grass fed beef liver - 1/4lb
tomato sauce
red onion
veggies...  can't quite remember all that went in there.

Made 4 bowls, so that's 1 oz of liver a day.  Healthy stuff.



2.  Baked King Salmon and veggies slow simmered in ghee.  More carb friendly on this one with the sweet potatoes.


3.  Bacon! and veggies - Golden beet, cauliflower, and asparagus.  Ran out of food, so I had to improvise.  Big stocking trip to get some more meat from Riverview Farms tomorrow at the Flat Shoals stop.

Sweet Potato, Veggies, and Fried Eggs & Bacon!

Here's a quick one...  My friend sent me a text saying "I miss carbs".  She's on Day 2 of the Paleo diet.  I told her to eat a sweet potato.

So, here's a Paleo friendly dinner.

Ingredients:

Japanese Sweet Potato
Shallot
Kale
Asparagus
Chopped Bacon

Low heat stir fry in Macadamia Nut Oil


Fry 3 eggs in your small Lodge cast iron pan



While you're waiting, take a few bites of your Fermented Veggies


Put it on a plate... and chow down
